Preparing Sauerkraut For German Sauerkraut Casserole

Hi I'm chef Rainer Wickel and I here today with ExpertVillage.com. Well, we're onto our next step. We've already drained all the liquid out of the sauerkraut. We've diced up our apples and now we're ready to cook it in wine. So, the first thing we need to do is, as you can see, our sauerkraut is already drained. We got most of the liquid out of there. And this is really good because that way we get that sour taste completely out of it. Now go ahead and grab your pot. What you're going to do is just go ahead and put the sauerkraut in there. Then get a spoon and go ahead and spread it out. We're going to take about 1/2 a bottle of white wine and that's what we're going to cook it in. It's going to give it a really, really nice flavor. So go ahead and pour that in there. Wwhat you want to do is have enough wine in there so it'll just cover up the top of the sauerkraut. So go ahead and stir it up. Now it's time to put the apples in there. Go ahead and grab your apples and put it into the mixture. What you want to do is you just want to stir it up. Make sure to mix it up well. The key to this is you want to come along and reduce this but the main factor on this is that you want to make sure that the sauerkraut is soft and not crispy. So that's pretty much the point to where you need to cook this mixture together. That's how we cook our sauerkraut mixture in wine to get ready to make our sauerkraut casserole.
