Preparing Ingredients To Make German Sauerkraut Casserole

Hi I'm chef Rainer Wickel and I'm here today with expertvillage.com. Well we're at the point right now where we need to prepare our sauerkraut. To get it ready to put it in our sauerkraut. What we need to do is we need to drain all the excess liquid out of the sauerkraut before we put it into the boiling pot to cook it. The reason that we want to do that is we want to get all that sour taste out of it. All we want is the actual flavor of the kraut. We don't want any of these additional juices because otherwise it is going to make it too sour. So go ahead and take your shift and put it into the bowl. You want to make sure that you have about a 1/2" space between the bottom of the bowl and the strainer because we want to give it enough room so that the liquid will come out of the sauerkraut. So go ahead and get your sauerkraut. Open it up and then your going to use a spoon and go ahead and take all the sauerkraut out and dull it into the strainer. And just go ahead and shake it. You can see already all the liquid is starting to come out of this. We want every last bit of this liquid out of here. Because we want to get all that sour taste out. Just let that sit there for a while. You want to make sure that all that liquid is nicely drained out of it. Just go ahead and let it sit. And the very next thing that we're going to do is we're going to go ahead and peel the apple. That's why I have this bowl here. So go ahead and grab your apple and start peeling it. We also need to take the core of the apple out. So just go ahead and cut it in a V. You want to make sure that you have entire core out so go ahead and start slicing it sideways. And the one thing you want to make sure of is that you don't cut your finger. Go ahead and keep flipping the apple once you get to a certain point. There's no real specific way of doing this. All you want to do is dice it up into nice little piece cause remember this is actually going to cook into the sauerkraut. And there we go. Now remember, this is going cook down quite a bit because we're going to be cooking this in the wine with the sauerkraut. But this is how you prepare your sauerkraut mixture to get ready to boil it in the wine.
