Add Egg Whites for Light Waffle Recipe
Hi I'm Karen for Expert Village. Okay now we are going to beat our egg whites. You want to make your bowl is clean and dry and doesn't have any oil or egg yolk or anything greasy on it as well as your beater. They have to be clean dry with no grease or oil or the egg whites will not whip up. We are going to whip to a soft peak stage and I will show you that when it is finished. Okay this looks ready and a soft peak stage. The egg whites should have nice small bubbles but the peak still falls when you pull them up. Not that bad, the egg whites. Also we are just going to dump our egg whites and scrape it off nicely and scrape it into the batter and then we are going to fold that into our batter. Folding simply means to pull the batter up front from the bottom and pull it over the top. You do this by scraping the along the sides, taking batter up from the bottom and laying it over the top of the egg whites. They are a little bit stiffer than I like them but this is still fine. See how nice and airy this makes the batter and you just keep going. You don't want to do it too much past them just being extend. As soon as you don't see any more lumps of eggs, then you are finished.
