Add Fruit to Pancakes
Hi I'm Karen for Expert Village. You may want to add into your pancakes fruits, nuts, or chocolate chips. I'm going to show you now how to add some apples or some blueberries into your batter. I'm going to take the batter we've prepared. I'm just going to split it in half pouring 1/2 of it into another bowl. Now you want to remember not to stir your batter too much, cause you don't want to knock the air out. Now for this size recipe I've chopped my apple up into small pieces about the size of chocolate chips or blueberries. And I'm gonna just sprinkle that over the batter. For the basic recipe you could put in about 1/2 cup of apples and about a 1/2 tsp of cinnamon. Just sprinkle that over. And to mix it in, you want to fold it in. Not mixing it too much, just taking the batter from the bottom and folding it over and trying not to over mix that batter. Thats all you do right there. Now for the blueberries I'm using frozen blueberries. And a good trick for that is to put the frozen berries in a bowl to sprinkle them with a little bit of flour. This helps to grab some of the juices so that your batter doesn't turn purple. Now we'll just sprinkle that over our batter like before. And again we just want to fold it in just incorporating it without mixing it up too much. The more you stir it the more blue color is going to come into your batter and you want to avoid that. Now for the chocolate chips, you would do just like the apples but without the cinnamon. You pour it in fold it quickly into the batter without stirring too much of the air out of the batter.
