Layering Quesadillas
I'm J and I'm talking to you guys on behalf of expertvillage.com and now we are going to layer our quesadilla. I got these beautiful flour tortillas and my nice big spatula I'm going to put my spatula down and put my quesadilla right on top of my spatula that way I have a easy way to going on the pan. What you want to do is you want to grab a big hand full of cheese and layer that down on your first tortilla. Spread that out as much as possible. The bigger the tortilla the more cheese you are going to need. This is just a regular size tortilla they do have those big burritos size tortillas but it is your own preference. You want to get some pico de gallo and you want to spread that along the top just like that and you kind want to put it towards the middle because once it starts cooking it is going to expand just a little bit. You want to stick the cheese right on top of the pico de gallo if you don't do this your other tortilla is going to slide right off it is not going to stick. So we have this thick cheese and then your ingredient whether it would be meat, pico de gallo, mushrooms, whatever you have, you want to stick cheese the same ingredient and then cheese that way it sticks. Get your other tortilla and kind of push it down just a little bit. Bring it over your grill, now I have just a regular pan here if you have one of those fancy grills attachment you can stick on your stove so you can make grill mark's. But me I'm just going to go the easy route, put it in there, here that nice beautiful sizzle, you what to do that to both sides until it is nice and crispy.
