Add Flour to Bread

Hi I'm Karen for Expert Village, I have let that beat for about 5 minutes. This is important to beat the liquid ingredients with the initial 3 cups of flour to get the dough nice and smooth and distribute the other ingredients evenly. Now we are going to put in 1 cup of flour at a time until our dough gets very thick and to hard for the mixing paddle to mix and then we would add the dough hook. Remove the mixing paddle and we put in the dough hook and we would continue the kneading dough with the dough hook. Lets start adding our flour, I don't want to add to much you want to start that mixture slowly. This could get a little bit messy when all the flour comes out so you might want to take a bag or a dish towel and cover that up just to get that mixed in without coming out of the bowl. Then we would at when it is pretty smooth we would add another cup of flour and covering up helps a lot and keeping and running this machine very slowly. Now that is pretty thick, lets let it run a little bit to get it a little smooth out and then we would be switching to our dough hook. See that dough wants to come right up and out, scrap off your dough. Okay we would scrap that off and remove the paddle and replace it with the dough hook and we are going to knead this dough with the dough hook for about 10 minutes until it is nice and smooth. And we would add flour if we need to add flour. Okay now it is kneading nicely, first we would let all the flour that is on the bottom of the pan mix in nicely and we would just let that knead. If it looks like sticky to the bowl you add a little more flour just a tiny bit at a time to keep that dough moving and not sticking to the bowl. Now if you like you could shut the machine off just a bit and push down the top to the bottom. I can already feel that dough is getting nice and smooth and not lumpy anymore we would push the top to the bottom and knead it again. It should get to be a nice wad pushed around in the mixture in one big lump and soon you would see it that it wont be in so many pieces it would be one big lump of dough.
