On behalf of Expert Village my name is Andrea Spano and I'm going to show you how to make crab cakes from my new book Not Just Desserts. Okay now we pay very close attention to our sauce and as you can see you see that consistency it is not to watery, it is just perfect the way it should be. I'm going to remove it from the heat source and the last step is to put in the reserved crab meat you don't want to put it any time soon then the crab cake is going to deceptive in the sauce and then you won't have any texture at all it would become part of the sauce but you won't be able to taste it in chunks. I like texture in my food and I think it really adds a lot to the presentation. Okay so there you have it and now we are going to take the sauce, there we go, we put it on top of the crab cakes, that looks super. You see how it drapes? Get a little bit of green on both sides and there you have it the most fantastic crab cakes you would ever taste. On behalf of Expert Village thank you for watching.
