On behalf of Expert Village my name is Andrea Spano and I'm going to show you how to make crab cakes from my new book Not Just Desserts. And I want to add in the horseradish you can use any kind of horseradish you want you can use the one that is prepared and has a little of mayonnaise in it that is perfectly exceptable. You can use one that says hot if want. I added about I will say about 2 teaspoon of horseradish that really gives it a nice bit and I want you to notice the color, the nice pink orange color. Alright it is very important that you get the high heat so that it boils so this is going to help reduce it to the consistency that is going to pour on top of the crab cakes so that it is not loose. You want to actually look to form on top of the crab cakes and just kind of lay on top of it you don't want it drowning the plate.
