On behalf of Expert Village my name is Andrea Spano and I'm going to show you how to make crab cakes from my new book Not Just Desserts. Okay now we are going to continue with the crab and I'm going to cut the basil I could cut it to this size pieces but sometimes it is easier I find myself wanting to snip it. Snipping the basil actually releases more of the fragrance of the basil so you could also snip just like that into larger pieces of you like. Remember when you add basil to any sauce that is going to cook to any length of time it is going to diminish in size even if you cook it a little large it is very enticing to have the basil in nice pieces because every little bit you bit into it, it is going add a lot more fragrance into that dish.
