Hot to Chop Peppers for Crab Cakes

On behalf of Expert Village my name is Andrea Spano and I'm going to show you how to make crab cakes from my new book Not Just Desserts. Okay so now we are going I'm going to show you how I like to cut the roasted peppers for this particular receipt. In some of my receipts I always strip it and leave it that way only so that the roasted peppers themselves kind of don't get lose in the dish so this time I really want it to blend in a little bit better so I strip them first and now I'm just going to cut them the length off of them and make them into little pieces this way it would blend better when I'm mixing the crab meat this is what I like to do is just kind of cut it more that way. That is the size of the roasted pepper that I like to put into this crab cake.
