How Boiled Shrimp Should Look During Cooking

All right we are back to show you our boiled shrimp procedure and these guys are pretty much done. If you notice I got a very low flame underneath the pot here and there is just a gentle steam coming off of these guys. As I mentioned in the previous video, we want to leave these in there as long as possible to elongate the cooking process on low heat so that the shrimp themselves will soak up this good seasoning that we have gone to all the trouble of making. So remove the spice bag from the bowl or from the pot actually and I am going to get a strainer and just pull these guys out. There's a nice gentle steam coming off the shrimp. They turned white all the way through and the shells as you notice, turned a really nice pink color so we will know that is our signal that they are done. They are curled over in such a way that they kind of formed the letter c which we always kind of tell people the c means cooked. If they are curled all the way over into a circle shape, that means they have been overdone so try to avoid that. So these are a nice c shape. As again as I told you before, we really didn't boil these. We just gave them a real nice gentle poach and I can smell that seasoning real nice and strong coming off of them so I know that we had a really good cooking process. So we are going to pull these over to the island and sprinkle some seasons on here while they are still steaming and we will be right back.
