Lemon Supreme Recipe

Hi! I’m Louis Ortiz on behalf of Expert Village and today we’re going to show you how to make a lemon supreme and we’ve shown you in a previous video how to do orange supremes. What supreme is it’s really just the flesh from the fruits with none of the bitter white pift attached to it and lemon supremes are used in various recipes and it’s usually as a final garnish along with some chopped parsley or something and it’s just a real nice little vibrant tidbit to have on certain dishes. So what I’m going to do is take off the top and the bottom of this lemon and I’m using a small senitar which is real similar to a filet knife and this gives us an actual foot on either end of this guy so that it’s a safe cutting, cutting surface that we have and by making that first cut we see how far the white pift goes so we’re going to use that a guide and we’re just going to kind of follow the curvature of the lemon and careful not to go too deep because we want to render the most amount of product that we can off of this. We consider this task more of just shaving than it is cutting and you can see as those peels fall off we don’t have any fruit really attached or any flesh attached to them so it’s not an issue of waste really we’re just trying to expose the flesh of the lemon. These pieces are left toward the base I’m just going to shave those down…alright so what’s left as you can see is we got the fruit or the meat flesh is separated by these white lines which are the pift and all we want to do is make a v-cut on either side of these lines and take off this lemon in sections, small wedges if you will and this is what we’re after is just a nice tidbit of lemon there and it’s just in a wedge and these are what are referred to as lemon supreme and we’re just going to repeat that pattern all throughout and take all the sections out of the lemon that we need and those are very nice addition and a very tasty little garnish to put on top of fish and all different types of recipes.
