Cook Cheese Mixture for Chili con Queso Dip

All right, we are back to show you the Queso Dip preparation/recipe. We've taken a whole block of the extra melt and put it inside a microwave safe container and I used about a 2 to 1 portion of the half and half and heavy whipping cream. So we pour those on top of the cheese and I cut those into smaller chunks so that it would melt evenly. So I've got just a rubber spatula here and I am going to go ahead and just start to stir this around and it's not finished cooking yet but I put it on about 5 minutes. So we are going to throw it in for about another 5 and I'll stir it again. We will start to get more of a Queso looking product out of this and we've got some residual cream in here so I am going to pour some of that off. We had some residual cream that was up to about the top of the container so we poured some of that off as we had quite a bit more than we needed. But for the initial cooking and intensive microwave heat, I like to have more liquid in there first and let it start to reduce down. So we've poured off I would say about an inch from the top, little over an inch. We are going to throw it back in the microwave and continue the cooking process.
