Turning Dough into Fettuccine for Homemade Pasta
Hi! I'm Louis Ortiz on behalf of Expert Village and we are back to show you the final preparation for some Fettuccine, made from scratch Fettuccine actually. I've got a pasta piece that I've taken through the machine down to a number 3 setting. So what I am going to do is take off this end and I am going to cut this in half, so that it is a little bit easier to work with as far as pieces. Now the tasks, the other part of this machine and flip the machine around so that I can crank from here and I am going to take it through this setting. There's two different ones. There's the front one for spaghetti and the other for the Fettuccine, so we are going to crank it this way so that it will come out onto the table. We are just going to kind of run this through there; there he goes. We are going to run this through even. I've got my hand waiting on the underneath side of the machine. Okay? It stays nice and separated in that fashion. There is some Fettuccine noodles for you and you may have to separate these this way. If you do, that's fine. Just as long they don't get gummed up inside the machine. That is what we are really trying to avoid. As you are making more pasta to keep this from drying out or actually sticking together, I've just got a cooling rack on my prep surface here. But I've got Semolinas sprinkled all over this to keep it separated and at that point, you can just put these on a sheet pan actually with some semolinas on the bottle of the sheet pan. We'll toss those noodles around to keep them from sticking together and we'll show you one more time; just the pass through here, some Fettuccine. I've gotten it started, switch hands. So we will come back here in a minute and finish the rest of the batch and show you how to boil it off.
