Opening a Coconut for Raw Food Recipes
Hi! I'm back in the kitchen with Rachel and we are going to show you what to do with the coconut; how to get it open. Now what were you telling me, this was a young Thai? This is a young Thai coconut. Meat inside is very very soft and the water is kind of slightly sweet and very delicious. Okay, the older coconuts tend to have a little bit harder meat and the appetizer that I am going to be showing you, the Caprese salad. You are using the coconut meat as a mozzarella so it has to be very soft. We use a lot of young Thai coconut meat in all kinds of things; in our deserts, in our ice cream. We puree them in and we use them along with other vegetables because has kind of a delicious flavor and texture.
This will be the mozzarella substitute. All right, show us how to open it. The first thing we have to do to open one of these coconuts is you have to cut the top off and empty the coconut water. Okay. Don't be scared. Yes. I didn't quite get it all out. I got a little bit coconut shell. Sorry. That's all right. That feels good. The top comes off a little bit better than this but there we go. Wow! Remember the guys on the side of the road in Hawaii do this for you. You can actually put a straw in there and actually eat it. Coconuts are so good for you. Actually coconut water is extremely high in electrolytes. That's all minerals, phosphorous, phosphate. Yummy. So we've got the water out.
