Counteracting Sugars in Vegan Fruit Ice Cream Dessert Recipe

You know I teach cooking to the blind at the Brail Institute and many of my students have gone blind because of diabetes so this could pack a real wall for them just eating the fruit like this especially banana it is a very high sugar fruit. So when we make this for the Brail Institute what we do is we container act the fact that the sugar by serving it with something like nuts at the same time so we make them a little sundae put a lot of walnuts on and that way it slows the digestion of the sugar and they are allow to have small amounts of this. So even though the banana is high in the glycemic index the protein and the fat of the walnuts helps it slows down. It seems to be okay. So you are food combining. Right at least for the diabetics that I work with I would never tell anybody to do this without asking there doctor but the students that I work with diabetes type two diabetes have been able to eat this ice cream in moderation. But they put lots and lots of walnuts on it to container act the effect of just having the fruit by itself and they do the same thing when they eat fresh fruits. Good idea. Thank you and it is actually quiet tasty that way.
