Add Cheese & Sauce to Enchiladas

Hi! So we are making some enchiladas for the kiddies and Lisa I’ve noticed that you put toothpicks, I did unfortunately our little tiny sprouted tortillas although they’re nice and nutritious they are too small and we have maybe a little bit more food than we probably wanted but of course our tummies are empty right now. So I went ahead and stuck those in there so they would hold nicely for us and then we go ahead and just pour the sauce on the top, this is your enchilada sauce about a cup worth of course you can see right now we have four enchiladas in there, just pour that all over the top you kind of want to get it on the sides cause you want it to kind of steep in a little bit it gives them a little bit more extra you know flavor and stuff. How much cheese? I usually put take a handful maybe half of cup for you guys out there that like a little bit more measurements. What kind of cheese are we using? We have a little mixture right here I believe it’s a Monterrey like a little blend, oh okay, so that’s usually what most people have in the cub board too or those nice blended cheeses or some nice ready shredded mozzarella or Colby Jack or whatever else like that and it’s also more fun too if it is kind of more colorful too. Alright now let me stick that in the oven, yes we go ahead and our oven is already preheated at 325 or excuse me 350 and you pop it in there for about 10 minutes and then it’s good to go once the cheese is melted. Oh that was easy, yeah nice and easy.
