Making Couscous Cake for Macrobiotic Cooking

We are also going to add lemon zest. This is your zestier the one that I showed you in the beginning of the show. Right. And to zest you just brush it along here. Your lemon or your orange if you want to do orange zest and you don't want to go to deep. You don't want to see any white you just want to scrap it across here. Great. Hmm I could smell that. It smells good. We are going to add this lemon zest to our koskos and I'm using that handy Le Creuset spatula. Yes. We are also going to add I decided to use orange extract. Oh okay. To add a little flavor to this. Could you use a vanilla? You could use vanilla, you could use a almond extract, you could do all kinds of things with this cake it is very versatile you could also use different fruits and the topping. Oh like peaches. Peaches would be great what ever is in season at the time you should use those. Right cause macro that is one of the principles that I learned you eat what is in season and you eat whats available in your region. We are going to put this in the bowl now. Okay let me get you a bowl. Here you go. And these Le Creuset pots are very hot so I'm going to have you help me. Sure. Put this into the bowl. Alrighty. I think I got it all. Then we are going to press this down. This is going to be the base for out koskos cake so we are very easily going to push it down and then we are going to stick it to the fridge to cool while we make our topping. Oh how long in the fridge? You want it to get hard you want it to harden probably about 20 minutes. Okay. You want it to be able to slice it like a cake. Oh okay so at least 20 minutes in the refrigerator. And then we make our topping for it while it is cooling. Let me stick that in th fridge.
