Helen McMahon for Expert Village. Oh I forgot the cookies. We put them in the oven last night. We turned off the temperature. The oven has kept the cookies warm all night and now we’re ready to have a look at them. Here they are! These are beautiful meringue cookies, forgotten cookies or forgotten kisses. Now there’s no moisture or there’s no lubricant on this pan and what you have to do now is to peel the paper off the back. Sometimes it helps to take a knife if some of them did run together. We’ll just separate them a little bit. You might loose a few because they’re very, very brittle but they are lovely to look at and very delicious to eat. They’re fragile so put them down very carefully just on the serving pan, serving platter where you’re going to have them. It’ll take a little time to get them all removed and you want to do it very, very delicately to keep them in tact as much as possible. You just continue peeling and making a little slice in between if any of them are sticking together. They look nice particularly on a dark platter or a plate because the light bright whiteness shows up very well.
