And these are small ones which is good for this kind of cookie and 1 cup of chopped walnuts. These are baking size small pieces of walnuts and it’s very convenient to have them in this already chopped up mode so that you don’t have to take the extra step of chopping themselves. This is folded into the mixture in a very gentle way. You do this with a very soft touch. I go around the outside of the bowl and then go half way down slicing the downward thrust and then go up to the edge of the bowl again. And you want to get the nuts and the chocolate all mixed in but with as few strokes as possible and as evenly distributed throughout the meringue as you possibly can. The volume we have gotten is done without any kind of leveling agent. The only thing that is given the expanded volume is by incorporating air into the egg whites so we don’t want to get to loose that beautiful volume so that’s why we do it very, very carefully and gently and that’s ready now.
