Helen McMahon for Expert Village. Our meringue is now ready to be taken from the mixture. We have tested it for graininess and we found that there was no graininess. And now we’re going to pull all of this our lovely meringue down from the beaters. If you have children in the house, they can help lick these beaters after you’ve taken off as much as you can. Kids love to do that. That’s a special treat for them and it also gets them interested in cooking because they figure that there would be more opportunities for doing that. So, we take all the meringue that we can off the wires and send it down into the edge of the bowl just for the moment. And then you’re going to remove it from the stand. And we’re going to be ready to add our next final ingredients in just a moment.
