Helen McMahon for Expert Village. The next ingredient we add to our meringue kisses is vanilla to give it a nice flavor. I prefer to use the pure vanilla extract, it’s rather expensive especially compared to the artificial flavored vanilla but it really does a much better job especially for something that’s going to be baked. So I think I would prefer to keep the machine off as I add this simply because I want to make sure that this expensive vanilla is incorporated into the mixture and doesn’t spatter all over which sometimes happens as you’re adding it. And you can see it, it gives a color kind of a beige color when it first goes in but then as you continue the beat it gets back to a white color. Once again a reminder to scrape down the sides of the bowl especially when vanilla has been added because that sometimes gets throwing up around the edges, you can see that it’s getting this wonderful kind of meringue texture to it at this point.
