You can do this by hand but you’ll be beating it for a very, very long time. Instead, since I’m going to be doing this with the kitchen aid mixer, we add this whisk wire beater. Put it down and you see it barely comes to the surface but as I turn up the beaters. I’m going to stop this just a minute to show you how that little bit of 2 egg whites, a very small volume of fluid, have now already become increased in size by four or five times of what it had been before. We continue this until you get a full volume of egg whites. It should fill about half way up to the pan and it can go up to the highest speed that you can get.
