Helen McMahon, here for Expert Village. We are ready now to add the flour to our oatmeal raisin batter and I think it is important to use unbleached flour. This is enriched flour and if it is unbleached, I think that it sets up better and is probably more nutritious. So I am going to dig in here and rather than sift it, which I just thinks takes extra time, I am going to kind of loosen it up a bit of this sort and then after it is kind of loosened a bit, just take a knife, scoop it across the top and add it to your mixture; this requires 2 cups. Use the flat part of the knife of course, because this part would make a concave of impression and you wouldn’t be actually getting your full cup measure and that is going to be added to the mixture. What I do when I turn the machine on is just pulse it slowly because otherwise you sometimes loose some of your flour; just give it a little time to get used to going in there.
