Helen McMahon, here for Expert Village. We are making our oatmeal raisin cookies here. We are going to add some walnuts as well but we do need to add the salt and you will need just 1 teaspoon of salt. That looks like it needs a little hint more; that should be just right. Again, I am going to stop this machine and let that be added and then you can turn it on immediately. The salt will give it a nice flavor, bring out the flavors of the other ingredients because of course, the oatmeal and the flour have no taste at all. We will be adding some spices in a moment but the salt will intensify the flavors of the other ingredients that we use. Now if someone is on a sodium free diet and they are going to be eating your cookies, you could eliminate the salt but for most folks, they do appreciate the 1 teaspoon of salt and remember it going to make about 4 dozen of cookies, so 1 teaspoon of salt distributed amongst 4 dozen, 48 cookies, is just a very minuscule amount.
