Fix Hollandaise Sauce for Eggs Benedict

Hello! This is Sean Roe on behalf of expertvillage.com. We have our poached eggs ready; we have our ham ready. The English muffins are ready. What happens if your hollandaise sauce breaks? You don’t actually have to start all over from scratch. If you hollandaise sauce gets too hot or too cold and it breaks and it turns what looks like just melted butter, what we can do is start the process over with that mixture back in the blender simply by separating two more egg yolks. Transferring those egg yolks back into our blender. Now that we have it reemulsified, we can pour it back into a bowl and have nice creamy hollandaise sauce.
