Our orange juice is incorporated with the rest of our sauce so the last thing we are going to add to it is just a little bit of oregano. We will let that simmer here and now you can, we are going to finish our rice here, and you can add either a tomato or canned tomato. I am going to add a canned tomato because we have used up all of our stock and with these we can have a little bit of juice we can add if this rice is a little dry and as you can see most of the liquid here has evaporated and so I am going to add just a bit of rice and I like bit chunks of tomato so I am going to leave these slices big like that and now we will go and de-stem our spinach and once most of the big stems are off and we will cut these into small pieces and it looks like I am putting a lot of spinach in here and once I start stirring it will wilt right down. I am going to open our feta and pull off a small piece and I am just going to crumble it right over the top and then I'm going to add a teaspoon of salt to both of our dishes and I am going to give the rice a stir to incorporate. This is going to wilt our spinach, wilt our tomatoes and also melt the cheese into the rice and once the cheese has started to evaporate I am going to put the top back on and let this sit as we wait for our chicken.
