We're going to want to flip our chicken around so that it cooks evenly. So as soon as we see white crawling up the side, we want to flip it over. You want to do that for all of our pieces of chicken so that they don't burn on one side. And while we're waiting for them to cook the rest of the way, we'll come back to our sausage. What we're going to do is we're going to cut; open a slit right down the middle and we're going to pull this casing off. Sometimes sausage casings will come off very easily like that, but sometimes you really have to work with them. But you do want to take this casing off. Okay, once it's off, we will discard the outside and we're going to cut this in half and we'll make little bite sized chunks and we're going to come back and remove our chicken. And it's okay that it's still not done. We will be cooking it again. We'll remove the chicken and then we will add our sausage.
