Chicken & Chorizo Sausage Ragu Meat Prep

Okay our second vegetable stock has come to a boil so I'm going to remove that from the heat. And again, dump it into our small container. And to discard the veggies you should have a really nice dark color. And using this burner, we'll keep it at the same temperature. And we'll heat up a tablespoon of oil. I'm going to put gloves on. I'm going to put about a teaspoon of salt and pepper on our chicken. And then I'm going to go and cut this chicken as equally as I can into chunks. And when it's done, then I'm going to go and dump the chunks straight here into the oil.
