Chicken & Chorizo Sausage Ragu Recipe

Today we're going to be making a chicken dish. We're actually going to be using chicken and sausage as our main ingredients and we're going to be making a ragu with that, so we're going to be having some tomatoes in there. We're also going to be having some garlic and some onions, as well as some carrots with our tomatoes, some sherry wine and some lemon juice. We're going to be adding some cayenne pepper to that and we're going to be sautéing that all up. We'll be adding a little bit of vegetable stock and we're going to take just our regular bouillon cubes. We're going to be taking some carrots and some celery and a little bit of onion. We'll be adding that to it to make it just that much stronger. So around this, we're actually going to be making a pinto bean and corn rice. So, we're also going to be making a strong stock for that. We'll be toasting our rice and then we'll be adding our stock. We're going to bring that to a boil, we'll put a cover on it, we'll reduce it down and then, right before it's done, we're going to be adding some red beans or some pinto beans, some corn, as well as salt and pepper and then we'll also be adding some red wine vinegar.
