After your first main phase you have what is called the combat phase. The combat phase is an opportunity to take any creature that you've had in play on your side, under your control since the beginning of your turn, attack the other player and attempt to reduce their life total. You do this by tapping them the same way that Lands are tapped for manna to show that they've been used this turn. The first part is that you announce your combat phase. Then you declare which of your creatures are attacking by tapping them and saying that they're attacking. At this point the defending player has the opportunity to block any creature that they don't want to take damage from with a creature that's in play under their control. Nightshade Stinger has an ability that says specifically it can't block. So that rules out Nightshade Stinger. The Sangrophage is tapped because we didn't want to take damage from it last turn. That means that only the Ravenous Rats have the ability to block right now. The Ravenous Rats can block either the Honor Guard or the Glory Seeker. The reason why they can't block the Suntail Hawk is that it's flying.
