Types of Chicken
Hello this is Chef Shawn Roe on behalf of expertvillage.com and want to go over quickly the chicken that we will be using is a chicken breast. Chicken comes in a very limited amounts, unlimited qualities, it is usually USDA or not, this chicken is a chicken breast which is a leaner cut of chicken. A little healthier. You could also purchase bone in chicken and chicken thighs, chicken thighs have a little more fat content. It usually have a little more flavor and a little more of a tender texture. Chicken breast have a little bit more of a firmer texture. When you are opening your chicken or you are expecting your chicken be sure that it does not have a slimy texture to it. If it is slimy texture then it is indication that there is bacterial growth. Also it should not smell like anything practically. The more the chicken smells the more that it means that it is unsafe to cook with. Now remember that even when you cook something all the way through it does not climate all the hazardous that could be cause by food born illness. So it is important that you work with fresh healthy chicken from the get go. Alright lets move on to our next part.
