Safety & Sanitation Tips for Chicken Preparation

Hello this is Chef Shawn Roe on behalf of expertvillage.com and before we get to the actual cooking I like to discuss certain sanitary and safety precaution that I always go over with anyone that I'm working with or anyone I'm cooking with and that is when you are cooking with chicken chicken is highly known for a salmonella content which means that we need to handle chicken very carefully. When storing chicken either store it frozen or refrigerate it below 40degrees. Always wash your hands prier and after handling chicken and when cooking chicken we have to be very cautious of making sure that the internal temperature reaches 165 degrees or above. When dealing with anything in the kitchen like knives or heat we have to be very aware of what is around us. It is always a good idea to clean as you go and keep your area free from debris and throwing things away as you need to or putting things away as you need to. Over here we have mallets, we have tongs, we have heating element, we have knives all could be very dangerous if not use correctly. So with that said lets move on to the actual cooking.
