How to Tell When the Steak is Done

Hello! This is Chef Sean Roe on behalf of expertvillage.com. Now we are done with all of our cooking methods, I would like to review doneness. Of course everyone knows that everyone has their own personal preference as to how they like their beef done; medium rare, rare, medium well and well. This is a good way to distinguish this as you can see. With this we have a rare; very red, little pink on the outside and cold in the middle. We have a medium rare which has some red left in there. Some pink and is definitely warm in the center. Then you have a medium which is just slight bit of pink, just a slight bit and it is hot in the middle and of course, as you step up the meat becomes more and more brown and less and less pink. This is due to the fact that when you apply heat to a protein it coagulates which means it tightens and it leaches out liquid so the more you cook a piece of beef, the less moist it is going to be and the texture will be vastly different between a medium rare and a well. There is no real health benefits either way. It is really just up to your preference and that is about it.
