Hello! This is Chef Sean Roe on behalf of expertvillage.com. We have just pan seared our steak for braising. As you can see that is some olive oil and some red wine. When you are doing a braising, what it is doing is breaking down the connected tissues through moist heat method. When you are braising however, you never want to have liquid any more than half the height of the meat itself. You want it about ½ to 1/3 so that it braises it on the bottom and then you can turn it over. It will cook it all the way through so it will be a well done when it is done but it will be very very moist, very tender. It is what you would use let's say if you were doing pot roast and you let this go on a very low heat for probably about for this maybe about 20 minutes but for a roast maybe 3 to 4 hours, depending on the size and that is the braising method.
Sounds like a really easy way to cook a steak well done without drying it out. I'm going to have to try this some day soon.
