Introduction to Cooking Methods of Steak

Hello! This is Chef Sean Roe on behalf of expertvillage.com and we are going to talk about the different cooking methods for beef and some of what we are going to review in practicality today. Those are two basic methods. There is a dry heat method and a moist heat method. With dry heat methods, you want to use steaks, things that have a less connected tissue. They turn out better that way. Dry heat method maybe would include baking, pan frying or grilling. Moist heat methods would be something like poaching, braising and both are very good for the different meats that you will be using. When you are using anything like a rib roast or anything that has a lot of connected tissue, that has to do with the shank or a lot of in an around an area that has a lot of moving parts is going to be more connected to tissue and the moist method will break apart that connected tissue and make it more tender. When dry heat is good for meats that have lesser of a fat content, have less of a connected tissue of content and they will turn out much better. So we are going to reviewing these three today; braising, baking and pan frying.
