Folding Over the Dough to Make a Stromboli Recipe

Hi! My name is Greg Goldberg on behalf of Expert Village. You can check us out at www.minettis.com. Today we are going to be talking about Stromboli's, how to fold them over, how to seal them and get them into the oven. Once you have your cheese and your sauce layed down, you are simply going to grab the end, give it a little tug, grab the other side and give it a little tug and just fold it right over making a moon kind of crescent. You are going to press down with the tips of your fingers making sure absolutely no sauce is in there. That will stop the dough from sealing immediately. That is not what your want. That dough needs to seal other wise all your cheese is going to leak out the side. Then what you do is give the Stromboli or Cal zone a little rock back and forth to get the ingredients nice and even. You are just going to grab it and make one, two little tears in the top. That is going to let some of the steam get out so the cheese is not going to force its way out. After that, just pick it up right underneath there and place it right on the stone in the oven. You can even bend the arms around to make it a moon.
