Tips for Working with Cake Fondant

Now I'll give you a few tips for working with fondant. Now, before we start working with fondant, there's some important things to know. You need to have a completely clean work surface and it should be smooth. I have this pie rolling mat that I use only for working with the fondant and it keeps it nice, and I keep it nice and clean. You could also use baking paper or you can buy a heavy plastic to put down on your table. You want it to be completely clean. You want your hands to be completely clean. Scrub them and wash them clean because the fondant, as you're kneading it and working with it, it picks up everything, every speck of dirt or lint. So you want to remember not to wear anything that has, like a fuzzy sweater or anything that might be linty. You'll need, when you're working with the fondant, you'll need some margarine or shortening to grease your hands and to keep them from sticking to the fondant. And you'll also need confectioners sugar on hand for dusting your rolling mat to keep the fondant from sticking to the rolling mat.
