Today, we're going to talk about how to pick a fresh head of broccoli. A few different things to look for when you're picking a fresh head of broccoli, is you want it to be really green, like this one, right here. This is a good fresh broccoli right here. Lots of green. What you're trying to look for is any kind of yellows like that around the edges, any kind of bruising like that, little brown spots; you definitely want to stay away from. You're looking for this green right here. This is a little too ripe. It's probably been out too long, you definitely want to stay away from anything like that. That should probably be taken off the shelves. A lot of the times, they'll be kind of spindly like this, and kind of purplish, you want to stay away from that as well. That could be too ripe. It's got little buds coming out like that. You want to stay away from anything like that, and, I mean, just any kind of mold, or anything around the outside, you want to look for. Go ahead and if they're in a bag like this, just pull them right out so you can get a good look at the top anyway, so you know what you're looking for. You want to find them really dark green like that. Sometimes they'll be like, in a bunch like this, you'll have a couple different stems there. This one is pretty good. It's green. But that one's still a little purple, so you're going to have to wait a little longer on that one. These ones are fresh, so basically you just want to stay away from any yellows, any kind of color, but green. You're looking for that good, fresh dark green color, right there.
