Prepare Spinach for Chicken Gorky

Now that our chicken is in the oven, we'll come back and look at our rice. We can see that it has absorbed most of the stock. We're going to come back and destem our spinach. I like going through each leaf individually. Then you can see if there are any brown spots, or dirt, or insects on them. I'm just going to give this spinach a quick cut, and then we'll take the top off our rice, and we'll add our spinach. Then we're just going to lightly dust with salt and pepper.
