Making the Stock for Chicken Cacciatore

Now that our paella is in the oven, we're going to go ahead and make a vegetable stock again. We're going to measure out a cup. We don't need quite as much as we did for the paella. Then we'll do a heaping teaspoon, and just like before, we will stir and knock until this comes off. As soon as it does, we'll take the back and smash it up against the sides, and stir it until it's blended. We're going to take our saut? pan, and we'll turn the heat up on that to about 7, and we'll heat up a tablespoon of oil. We're going to move our asparagus over, and I'm going to grab a glove. I'm keeping this chicken on this plate, and using this glove so I don't contaminate any other surface with the raw chicken. We're going to lightly go over the top, and the back.
