Summary: German pancakes, also known as Dutch baby pancakes or Dutch babies, are actually closer to Yorkshire pudding than the traditional flap-jack style pancakes familiar to the American eating public. Although made with milk and egg batter as well, the German/Dutch variety is not fried but baked in a pre-heated pan in a very hot oven until the batter has risen. Upon serving, the batter quickly falls, giving the pancakes a consistency and appearance somewhere between an omelet and a soufflé. This dish is then topped off with syrup and powered sugar and often garnished with fruits
